Taking Care of Large Cutting Boards
Due to their weight and size, larger board require special considerations. Understanding these considerations will insure that your board will provide excellent service for many years.
Large boards will often be washed in place, rather than carried to a sink. Water can seep under the board and soak in rather than evaporate, thus expanding the wood. The water on the top will initially soak in, but the exposure to air lets the board dry out. When only the bottom of the board expands, the board will curve upward. This can be prevented by either flipping the board over periodically or making sure that the underside is dry and not sitting in water.
This can also occur if a board is stored next to a sink or coffee maker, or any place where water will inadvertently be drawn under the board.
